【食卓】30秒微波發酵法の免揉紅豆麵包 (麵包超人造型)

之前買了一個很可愛的耐熱碗 (口徑約15cm),一直都沒有時間去用
看了該碗所附贈的麵包食譜,讓媽咪很驚訝!一個小時內可以將麵包烤好!!??
一般的麵包烘烤,從揉麵到出爐~全程需要23個小時。 
至於正統的免揉麵包,光是發酵時間就需要1218小時之久。
詳細閱讀了該食譜的製作流程....一次發酵以及二次發酵只需30秒而已(驚訝ing)

這神奇的30秒發酵+免揉麵包食譜,
是由村上祥子(日本料理研究家)所研發出來。
使用微波爐來進行發酵,
在一個小時內就能夠品嚐到香氣誘人的麵包。

媽咪試做了之後,覺得這30秒發酵的免揉麵包食譜超棒!
不費力更不花時間!很居家的麵包烘烤方法,非常適合忙碌的朋友們!
因為依然有很多朋友在詢問關於麵包超人的紅豆麵包的食譜
在這裡,媽咪就做了些小變化,
以人氣麵包超人的造型來分享這款~30秒免揉的超型紅豆麵包^_^



 

<材料:>  
高筋麵粉 
100g、鮮奶 70ml、奶油 10g、速酵母 3g、砂糖 9g  
1g、蛋液 10g、紅豆餡 (15gx5)、巧克力糖霜筆(蛋糕裝飾用) 1 


 
將鮮奶以及奶油,倒入微波爐可用的耐熱容器中。
不需要加蓋保鮮膜,以高微波(500-600W)30秒加熱。  



從微波爐中取出後,攪拌地均勻。

NOTE: 加熱後的溫度若超過37℃以上,會影響發酵的品質!請注意!

然後順序加入酵母粉、砂糖、鹽 均勻地混合。   



1/2的高筋麵粉倒入,稍微拌一拌。
之後加入剩下的高筋麵粉,以稍微攪拌。 
 

POINT: 不需要用力去揉捏!只需用筷子將材料"集合"起來即可!!


   
   (※圖5)的麵糰蓋上烘焙紙 (照片中的橘色蓋子與耐熱碗是一套的)
放入微波爐中,以弱微波(150-200W)30秒加熱,進行第一次發酵
  


從微波爐中取出後,蓋上濕紙巾 保持上蓋的狀態下,放置室溫10分鐘。
麵糰看起來似乎沒有多大的變化,第一次發酵完成!!  



在工作台上灑些高筋麵粉,將(※圖7)發酵完成的麵糰輕壓放氣,然後分割成6等分。


  
將麵糰的邊緣往內側收口,然後在手心上滾成小球狀。   



先蓋上一張烘焙紙,然後加蓋濕紙巾。放置室溫15分鐘醒麵!  



在工作台上灑些高筋麵粉,將(※圖10)醒麵完成的小麵球輕壓放氣。
略為壓成扁圓形,將1顆約15g的紅豆餡包裹起來成型;一共5顆!  



將最後一顆麵球分割成5等分。然後再分成3小顆(2腮紅+1鼻子);共5組。
以筷子的圓端在(※圖11)麵球上押出3個小圓洞。
3小顆一組的腮紅鼻子定位在麵球上即可。
先蓋上一張烘焙紙,然後加蓋濕紙巾。
放入微波爐中,以弱微波(150-200W)30秒加熱,進行第二次發酵 



從微波爐中取出後,將第二次發酵完成的麵球移置到烤盤上。
在蓋上烘焙紙以及濕紙巾的狀態下,放置室溫10分鐘。
全面刷上蛋液,送入預熱了180°C的烤箱,烤約1215分鐘。
待新鮮出爐的紅豆麵包放涼了之後,用巧克力糖霜筆畫上元氣的笑臉即可。  



非常意外這樣快速省時的發酵法所烤出來的麵包,一樣美味可口!

    您好 如果家裡沒有微波爐的話可以用什麼方法替代ㄋ?

     這個食譜主要就是利用"微波"來刺激加速發酵
     所以若沒有微波爐就沒辦法了.

    家裡只有小烤箱(只能調時間的那種)
    那時間上要怎麼調整呢
