牧師帽餃子 Agnolotti

我前陣子忙呀忙, 忙到日夜顛倒, 自己吃飯有一餐沒一餐, 哪來的雅興下廚實驗新的料理或是甜點? 別說實驗新菜, 連家常便飯時常都無閒準備, 所以Mr.Lee常常得出外覓食, 委屈他了, 也委屈了被冷落的廚房。

離開廚房的這段期間, 我很想念我的烤箱, 鍋鏟, 桿麵機, 還有其他好多好多的器具和香料們, 每當望見它們在廚房的角落耐心的生灰塵時, 我就等不及可以再度回到廚房悠閒做菜的時候。

現在終於忙完了, 廚房這才回復到從前飄香的日子, 皆大歡喜。

決定實驗牧師帽餃子: Agnolotti慶祝。



義大利人形容的牧師帽餃子, 是由兩片長方形包住一個鼓起的形狀, 我覺得如糖果般可愛。


照名廚 Thomas Keller 在"The French Laundry Cookbook"一書中的食譜烹調, 把Agnolotti搭配煎的酥脆的培根與以鼠尾草(Common Sage)調味的奶醬。


鼠尾草葉片的顏色是帶點灰藍的深綠色, 味道與顏色一樣奇特, 是種薄荷的清香, 帶點胡椒香和生澀的味道, 單獨吃味道過於濃重刺激, 然而卻很適合中和油膩感。 在此, 有的鼠尾草切得細碎與奶油和鮮奶油調成奶醬, 有的炸成脆片。 融入鼠尾草香的奶醬配上鹹酥的培根, 使得清香與油膩、濃密與酥脆恰大好處的中和; 而酥脆的鼠尾草葉片又正好襯托出餃子餡的甜, 又是一個酥脆與濃稠的結合。

與Keller食譜不同的地方在於我把大廚的甘薯泥餡換成Butternut Squash(又稱Butternut Pumpkin, 中翻油脫瓜或是油桃果南瓜)泥餡。 我認為Butternut Squash味道優於普通南瓜, 因為它的甜味比較多層次, 帶點堅果味, 味道剛好介於普通南瓜與甘藷之間, 在做成餡之前放到烤箱裡烘烤, 壓成泥後在放入鍋中煮掉水分, 甜味更為濃縮, 照Keller的調味方式料理, 非常美味, 就連拒吃南瓜的Mr.Lee都受到誘惑, 津津有味的吃起餃子。

一盤香噴噴的餃子, 沒有一個味道越界, 只有互相襯托與提升彼此的香味與口感, 好一個美味的平衡點。

Butternut Squash耀眼的橘紅色為白色的奶醬增色不少。

I bought this book (and the other one too)sometime back but never get to cook anything from it yet >.< Talking about being busy, beside that I have to whip up two engagement cakes, I am also doing a photo shot/styling for a website and hosting 2 events for the next 7 days!!!! Hopefully I'll still be standing after all these....

These photos' clarity are superb!! I remember that you said your new camera is a Nikon D40 and I'm think of getting it. Is this a Nikkor 50mm f/1.4 that you're using?!

昨天往上躺在床上還在想著怎麼Verano好久沒有出新菜啦,沒想到今天起床就看到這麼可愛又漂亮的餃子,還有難得出場的Mitzi^^
剛病了幾天,吃烤吐司和蘇打餅乾吃到嘴巴淡出鳥來,剛好看這餃子過過乾癮~~

I know it's confusing, coz it's also called "forty"D. It was a lil pricey when I got it, but I love it! It's worth it. The price has come down significantly.

不會聳啦! 這種形狀的餃子是蠻罕見的, 是義大利某個地區折的形狀
我以前也沒看過, 是翻了這本食譜才知

啊為什麼會想到蛋餅? 我覺得很有趣的聯想? 哪個部份想到蛋餅? ^^

Hello,我常常來看妳的文章,妳照片拍的很好,東西看起來也好美味,每次看著看著不禁都餓了起來 :-) .
我有一件事想請教妳,應該說麻煩..haha..
我想請問的是妳之前做的焦糖布丁(Creme Caramel/ Flan)妳的食譜和做法可以跟我說嗎?因為學校有個作業要做,我得做出不同口味的布丁 :-( , 妳的布丁看起來很美味,我想試試,然後可能在加上抹茶粉進去看看..haha.. 有空的時候再麻煩妳回覆,謝謝 :-)
