好吃不算難做的大餅_Barbari Bread (Persian flatbread in Iran)&nbsp;&nbsp; 跟好友通電話中,她提到了在LA 的中東市場裡吃到這個中東人的國民大餅,害我嘴饞的不得了. 於是翻出A Blessing of Bread by Maggie Glezer 書中的配方,稍作修改加了部份的sour dough starter做了三個這樣的大餅餅解饞.&nbsp; 這餅餅單口吃就很好, 但也可以配cheese ,像這樣. 我們家呢,剛巧做了一點hummus,就用這個當涂醬夾餅餅也是好滋味.&nbsp; 有了Youtube後,真的很方便,總能在不意間看到一些很不錯的影片,像這個Noon Barbari,就可以看到這種餅餅是含水高的麵團做成的. 在攪拌的過程中,用了autolyse的方法(注意那個負責扮麵的小夥子,有一段中間講話時,他用的機器是停下來的,那是在做什麼,在autolyse)還有呢,那個攪拌裡是很多個stretch and fold 動作完成的, 因此我在家做時,也是參考這些個地方來學做這餅餅. 因麵團濕,台上的corn meal (or semolina flour)就得用的豪氣點, 中間如有stretch and pull的動作時,那醒麵的時間也要足, 最後烤前一定要在麵團上畫溝溝,或彈鋼琴點點點, 這樣麵團上有了點點(溝溝)後,才不會在烤的過程中隆起很大很高的氣泡.&nbsp; 當然能有炭火烤那是極好,如果沒有,就像這個影片中建議的用高溫(550F) 烤個十來分也可達不錯的效果而我的烤法是將麵團直接放在預熱的石板上來烤.&nbsp; 不過呢,我寫的再多再少,好不好吃 也還得等客倌做了才知? 它不算難作但相信我,做了吃了就知其中的好滋味.&nbsp;&nbsp; 最後請看看這些個人,這些個包包,這些個美食,問我想吃怎樣的餅餅包包,這些就是我想的_樸實不花巧,簡單的用料,透過鏡頭我卻仍聞得到感覺得到的麵香.]]>
