Transitional Whole Wheat Focaccia
Recipe : Whole Grain Bread by Peter Reinhart
Learning Lessons:
- 35% Whole Wheat + 35% White Wheat + 30% Bread Flour
- firm starter
- Herb Oil
這個包包跟上次的相差不多,除了換了調味的Herb Oil,最主要是將全麥的比例調高,來探試一下家人對此包包的接受度,今早我不作聲地仔細看米飯幫主跟小人吃的反應,沒人叫乾叫燥叫不合口味,嘿嘿!看來下次就可以向100% Whole Wheat Focaccia 前進.

++: 那個herb oil 是拿做给我家米飯幫主,沾他喜歡的貴妃雞的蔥薑油,可是老實說有點糟塌了這油跟這塊包包,我覺不太搭,還是前一個的herb oil 好. 對了,我的麵包好友說放Za’atar 也很優.

Dear Web,
我去了老墨店,没找到Panela sugar,可是看到了Gramham Whole Wheat Flour。奇怪的是,它怎麽比AllPurpose Flour 還便宜呢:$2.99 vs $3.59?

Web: 我都還没有机会去真正的中国/台湾超市逛,所以還没找到熟石膏。那個Panela Sugar 我想我可以找到的。结果昨天在Walmart 看到,Gramham Flour 才2.39/5磅 by Hodgeson Mill.
