阮秋簪姊妹的越南食譜
1.蝦子切細 + 芋頭切絲 + 洋蔥切丁 + 混合絞肉 + 少許胡椒粉 + 鹽巴。
1.羊肉醃少許鹽巴 + 胡椒粉 + 咖 哩 粉 + 香 料 + 蒜頭醃10- 20分入味。
啤酒蒸雞
【材 料】雞肉、紅蘿蔔、馬鈴薯、蕃茄、蒜頭、椰子水、啤酒
【調味料】鹽、辣椒
涼拌青木瓜
【材 料】青木瓜、蝦米、豬肉、去皮花生、九層塔
【調味料】檸檬汁、白砂糖、鹽
超級美國馬鈴薯沙拉 TRISTA'S SUPER-USA POTATO SALAD
Ingredients: olives (both black and green)、capers (usually in Mediterranean section)、potatoes (a bunch)、celery、coriander、hard-boiled eggs、Italian pasta (I prefer shell-shaped)、American Mayonnaise (ONLY Best Foods or Helmann's -- NO OTHER)
Directions: Boil potatoes and pasta shells, chop everything else up, put it all together, enjoy. Wow! So Delicious, Just Like USA." Actually this potato salad is a "souped-up" version of my step-granny's more simple potato salad (capers, olives, eggs, potatoes, mayonnaise) that she made for my grandfather's lunch every day. 【材 料】橄欖(黑和綠的)、酸豆、馬鈴薯、西洋芹、芫荽、水煮蛋、通心麵(貝殼形狀)、青蔥、洋蔥
【調味料】美國美乃滋、辣椒粉、鹽、胡椒粉、蒜鹽
【作 法】馬鈴薯、通心麵煮熟,所有材料切好,拌在一起
印尼咖哩雞
【材 料】雞肉、紅蘿蔔、馬鈴薯、檸檬葉
【調味料】鹽、椰子粉、印尼咖哩
【做 法】馬玲薯炸過、雞肉切塊川燙。一鍋清水放入雞肉十分鐘後,加入馬鈴薯和紅蘿蔔,加入印尼咖哩約三十分鐘後起鍋。起鍋前再加入椰子粉調成的椰子水即可。
【材 料】小魚干、花生、辣椒、紅蔥頭
【調味料】紅砂糖、醬油、醋
【做 法】紅蔥頭切碎爆香、炸小魚乾和花生。倒入沙拉油、紅蔥頭爆香,加入紅砂糖攪拌,再加入醬油和醋。然後倒入小魚乾和花生,炒均勻厚,即可起鍋。
Oxtail Kare-kare 牛尾卡哩咖哩
Ingredients 材料
1 oxtail (3-5 lbs.) 牛尾一條
5 tbsps, oil 油五茶匙
5 cloves garlic, crushed 五粒蒜頭,壓碎
1 medium sized onion, sliced 一顆中號洋蔥,切片
water from 1/4 cup achuete, soaked 1/4杯 “紅木”(一種香料)泡水
1 banana heart, sliced crosswise 一朵香蕉花,橫切
2 bundles Chinese long bean (sitaw), cut into 2-inch pieces 兩把中國長豆,切成兩吋長
4 eggplants, cut into 1/2 inch slices 4根茄子, 切成 1/2 吋長
1/3 cup rice, toasted brown in a pan and ground to a powder 1/3杯米, 放到炒菜鍋中炒到微黃,然後磨成粉
1/2 cup peanut butter 1/2 杯花生醬
salt and pepper to taste 加適當的鹽和胡椒粉
Cut oxtail into 3 inch pieces. Boil once and discard water. Boil again until tender. Saute garlic and onion in oil. Add achuete water, sauted garlic and onions to meat and bring to a boil. Add vegetables and enough water to make a sauce. Add the powdered rice and peanut butter dissolved in 3/4 cup water into the meat. Season with salt, pepper and MSG. Serve with Bagoong Alamang on the side.
將牛尾切成三吋長,用水煮開後,將水倒掉。再加水煮到軟為止。將蒜頭和洋蔥在油裡稍微炒一下,加入“紅木”(一種香料)水,加入牛尾及水一起煮。加入青菜及足夠的水;加入炒黃壓碎的米和花生醬混合3/4杯的水到肉中。加入適當的鹽和胡椒粉;用盤子盛好,盤邊加一些蝦醬。
