Carrot cake is not my favorite cake because I don't like the taste. This special carrot cake made me change my mind. Mary Jane had this cake for my farewell party. I had two slices of this carrot cake. It was so delicious. I had to get recipe from her. According to Mary Jane, this is her mom's recipe.
Mom's Carrot Cake
Ingredients:
2 cups flour
2 cups sugar
2 tsp. Baking Soda
2 tsp Salt
1 tbsp Cinnamon
3 cups grated carrots (1 lb.)
4 eggs
1-1/2 cups salad oil
1 cup nuts
Instruction:
Preheat oven 350 degree. Sift dry ingredients into large bowl and set aside. In blender container blend 1 cup carrots with an egg and 1/2 cup oil. Repeat twice, adding nuts and extra egg during last blending. Combine dry ingredients mixing well. Pour into greased 10 inch tube pan. (We use regular cake pan 9x13). Bake for 1 hour.
Forsting
1/2 cup butter
1 – 8 oz. pkg Cream cheese (softened)
1 – 1lb. Box confectioners sugar
1 tsp. Vanilla extract
Cream butter and cream cheese together. Blend sugar and vanilla until smooth.
