			我相信文筆好是決定美食寫作成敗的最重要因素，而且我也對此求教於人。《美味》雜誌總編輯柯爾曼‧安德魯斯坦言：「寫不出好文章的人，也寫不出好的美食文章。這事關清晰表達、風格、語氣、正確性、對結構及語言韻律的知識。認為美食寫作可以自外於此的想法並不正確。」　　自由作家大衛‧萊特也同意。「雖然最好的美食文章要讓人食指大動，作者要立場鮮明，能生動地描繪環境氣氛，但是其它重點和所有好文章是一樣的。有的人能夠把換機油也寫得跟吃到美味桃子一樣令人陶醉。關鍵在於你怎麼使用語言，怎麼溝通。」　　我甚為崇拜凱文‧崔林(註2)。他為《紐約客》雜誌寫美食文章超過十年，現在偶爾也替《美食》雜誌撰寫旅遊文章。他堅持不肯把自己的文章稱之為美食書寫，而是稱為「和吃有關的文章」，也不和其他非小說類作品作區別。他堅持自己不是廚師，沒有烹飪知識，也不給食物打分數。「叫我外行人也不為過。」他說。　　為了進一步舉證，崔林告訴我，他寫的所有文章都不直接描述食物。我覺得這難以置信，怎麼可能有人不用形容詞來寫食物？我立刻在書架上找幾篇他的散文來讀。他在一九七四年所寫的《油炸美國：一個開心老饕的冒險》可說是最佳例證：「我自己身在旅遊界，我知道在陌生的城市請人介紹最好的餐廳，結果被帶到供應『歐陸美食』的紫色宮殿，其大廚的食譜寫得遠勝烹飪手藝，會是什麼樣的情形：我，一個無知的旅人，坐在這種地方，閱讀菜單上三段長長的描述，裡面詳細說明鱒魚要怎麼包、要怎麼煎，然後在我的碟子上滋滋作響的聲音聽起來又如何，只差沒有提到這條可憐的魚，在經歷上述處理過程前，已經冰凍了八個半月。」　　有兩位得獎的作家都說，就像其他的藝術寫作一樣，美食書寫充滿揮灑創意的空間。《時尚》（Vogue）雜誌專欄作家傑弗瑞‧史坦嘉頓(註3)說，他的短篇故事採用「倒敘又順敘」的方式。《食指大動》（Bon Appetit）雜誌專欄作者兼特約作家亞倫‧里奇曼(註4)說，美食寫作比其他型態的新聞寫作提供更多自由表述的機會。「寫美食報導或食評的時候，經驗是很主觀的，所以你愛說什麼就說什麼。你要尖酸刻薄、逗趣詼諧、無所不知都可以。」他解釋道：「無論是以生菜、一家新店舖或餐廳開幕為題寫作，還是你寫的主題已經被人寫過成千上萬次，你仍然有機會去找出新的角度。美食寫作在本質上就是會重複，這應該是鼓勵人更有創意，而不是造成阻礙。」 註2：凱文‧崔林(Calvin Trilling)，美國新聞記者、小說家，以文筆幽默的美食文章聞名。註3：傑弗瑞‧史坦嘉頓(Jeffrey Steingarten)，美國律師兼食評家。註4：亞倫‧里奇曼(Alan Richman)，美國食評家。
